Why not in a Clay Pot?
January 31, 2011 Gourmet, NewsSometimes you don’t know how to use clay pottery, here you can find great tips for the correct use of it. And of course a fantastic recipe that will make the difference.
Before the first use, clay has to be cured (seal) in order to close the pores of the clay. Curing can be done with oil or milk depending on the product.
Oil Cured Instructions, for baking trays and bowls:
1) Lubricate the entire surface of the product
2) Place in the oven for 5 minutes over high heat
3) Allow to cool and wash
Milk Curing Instructions, for pots, jars and glasses:
1) Boil milk in a traditional pot watered with a tablespoon of butter, in proportion to what is going to be cure.
2) Drain the boiled milk in the entire inner surface of the product for a few seconds.
3) Wash with warm water and dry.
After doing the curing process you must put your hands on for a great recipe perfect for winter time.
Caldillo de Congrio
• 2 pounds cod, cut into 4 steaks
• salt
• ¼ cup lemon juice
• 2 carrots, scraped and thinly sliced
• 2 pounds small potatoes, peeled and thinly sliced
• 2 medium onions, halved and thinly sliced
• 2 cloves garlic, chopped (optional)
• freshly ground pepper and coriander
• ¼ teaspoon oregano
• 1 cup dry white wine
• 4 cups stock mixed with 1 tbsp of tomato concentrate
• 4 tablespoons olive oil
1. Put the fish steaks into a casserole, preferably earthenware ( clay, available at Puro Chile), large enough to hold them in a single layer.
2. Season with salt and the lemon juice.
3. Cover with a layer of carrots, then a layer of half the potatoes, then the onions and garlic, and the rest of the potatoes.
4. Season with salt, pepper, and oregano.
5. Pour in the wine, fish stock, and olive oil. If you are making the fish stock, it’s important that you use the head of the fish for an intense flavour.
6. Bring to a boil, reduce the heat, and simmer until the potatoes and carrots are tender, about 30 minutes.
7. Serve in soup clay bowls (also available at Puro Chile) accompanied by crusty bread and butter. With the addition of dessert, or cheese, this makes a splendid lunch or dinner.
